Bring these cookies to your next holiday party and feel good knowing you have healthier options. These cookies also make a great holiday gift!
Ingredients:
1 cup flour
1/2 tsp baking powder
1 cup rolled oats
4 tbsp butter, softened
5 tbsp unsweetened applesauce
1/2 cup brown sugar
1/2 cup sugar (or try Splenda Sugar Blend for Baking)
1/4 cup egg substitute
1/2 tsp vanilla extract
1/2 cup dried cranberries
1/4 cup pecans, finely chopped
1/2 cup white chocolate chips
Directions:
1 Preheat oven to 350. Combine flour, baking powder and oats in a medium sized bowl.
2 In another bowl, beat butter, applesauce and sugars. Beat in egg substitute and vanilla. Beat in dry ingredients and fold in cranberries, pecans and white chocolate chips.
3 Roll tablespoons of dough into balls and place on a cookie sheet lightly sprayed with cooking spray. Press each ball with a fork to flatten. Bake for about 15 minutes and let cool.
4 Yield: about 36 cookies. 1 Serving: 2 cookies.
5 Try freezing leftovers to avoid mindlessly munching!
