Don't let the word "fried" scare you - this popular Chinese dish is healthy! Serve with plenty of steamed or stir-fried veggies.

1 | Heat pan. Add 1 teaspoon of oil. Add eggs and scramble. Remove cooked eggs and set aside. |
2 | Add the rest of oil (2 teaspoons) to pan. Stir fry rice, breaking up lumps by pressing rice against pan. |
3 | Add chicken and vegetables. Stir-fry until heated. |
4 | Add green onions, water chestnuts and reserved eggs. Serve hot. |
5 | Serve with lite soy sauce and hot pepper sauce if desired. |
6 | ENJOY! |
