Colorful, crunchy and full of flavor, this salad will add life to any meal.
Ingredients:
Salad:
5 cups raw broccoli flowerets, chopped in small pieces
1/2 cup (about 1 small) red onion, finely chopped
1/4 cup salted dry-roasted sunflower seeds
3/4 cup dried cranberries

Dressing:
2 tablespoon granulated sugar
1 cup low-fat mayo
2 tablespoon red wine vinegar
1 teaspoon liquid smoke (optional)
1/4 teaspoon salt (or to taste)
1/8 teaspoon pepper
Directions:
1 Combine salad ingredients in a medium size bowl. Mix well.
2 In a small bowl, mix dressing ingredients well.
3 Pour dressing into salad. Mix until vegetables are lightly covered with dressing.
4 Cover and chill for at least 1 hour before serving. Makes 7 cups.
