Perfect for a summer barbeque, this tangy chicken is marinated in lime, soy sauce and ginger. Serve with rice and salad.

1 | Place chicken breasts in a shallow glass dish. Combine lime juice, soy sauce, ginger, jalapeno, oil, garlic and scallions, and pour over chicken, turning the chicken over to coat both sides. |
2 | Cover and marinate in the refrigerator for 2-4 hours. Grill on medium high or broil for 6 minutes each side, until the chicken is done. |
