Let these tasty protein-rich tofu spinach balls take the place of fatty meatballs. The medley of herbs, bread crumbs and tofu is delightful!

1 | Preheat oven to 350. Thaw spinach and strain well. Reserve liquid in case moisture is needed in the mix. |
2 | Combine flour, bread crumbs and seasonings; mix well. |
3 | Add spinach, onions, walnuts and mashed tofu to flour mixture and mix well with hands. |
4 | If mix is to dry, add a little spinach juice or eater. |
5 | Form into small balls. Place on a cookie sheet sprayed with cooking spray and bake for 30-40 minutes until lightly browned. |
