1 | Pound chicken breasts between 2 heavy duty sheets of plastic wrap using a meat mallet or rolling pin until about 1/2-inch thick. |
2 | In a bowl, beat the egg. Dip the pounded chicken into the egg and then into the bread crumbs, coating evenly. |
3 | Arrange the pounded chicken breasts into a non-stick baking dish (or coat a regular baking dish with cooking spray) and bake at 350 for about 20 minutes or until chicken is golden (make sure chicken is no longer pink inside). |
4 | Slice chicken into strips and now you have healthy chicken strips! Serve with the catsup, bbq sauce, mustard or low-fat ranch dressing. |
