Herbs add color and tons of flavor to this low-fat super side dish!

1 | Scrub potatoes and cut into cubes. Place in medium saucepan and cover with water. Bring to a boil. |
2 | Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain. |
3 | Mix dressing ingredients. Combine hot potatoes, dressing, peppers, basil, thyme, and onion powder. Serve hot or cold. |
