Adding color to your plate has never been easier! Load up on this quick and easy vegetable dish!
Ingredients:
1/4 cup red onion, chopped
1/2 cup zuchinni, sliced
1 small Japanese eggplant, sliced
1/2 cup canned chopped tomatoes
1/4 cup light mozzarella
Fresh chopped basil (or dried) to taste
Directions:
1 Preheat oven to 400 degrees. Spray a baking dish with non-stick spray.
2 Chop all the vegetables and the basil and add them to the baking dish. Top with the mozzarella.
3 Bake at 400 degrees for about 10-15 minutes.
4 ENJOY!
