Lentils are a great alternative to beans and make a great cold salad. You're sure to enjoy this blend of fiber-rich lentils, veggies and herbs!

1 | In a large bowl, combine lentils through parsley and mix well. |
2 | In a small bowl combine Italian dressing and mustard, whisk well. |
3 | Toss lentil mixture with salad dressing mixture. Garnish with green onions. |
4 | Serve as a side dish or over a bed of spinach with a whole grain dinner roll for a main meal. |
