Moist and chewy - these cookies are scrumptious. Watch them fly off the plate!
Ingredients:
3/4 cup sugar
2 Tbsp margarine or butter
1 large egg
2 Tbsp lowfat milk
1/4 cup canned applesauce
3/4 cup all-purpose flour
1/4 tsp baking soda
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/4 tsp salt
1 1/4 cup quick oats
1/2 cup raisins
Directions:
1 Preheat oven to 350 F.
2 Using an electric mixer on medium speed; cream sugar and margarine or butter until smooth and creamy.
3 Add egg and mix on medium speed for 1 minute.
4 Add milk and applesauce. Mix for 1 more minute, scraping the sides of the bowl.
5 In a small bowl, combine flour, baking soda, cinnamon, nutmeg, and salt. Add dry ingredients gradually to the creamed mixture and mix on low speed for 2 minutes, until blended.
6 Add oats and raisins; blend for 30 seconds on low speed, scraping the side of the bowl.
7 Drop rounded teaspoons onto lightly greased cookie sheets.
8 Bake for 10-13 minutes until lightly browned. Cool on a wire rack. Serving Size: 1 cookie.
