Silken tofu works wonders in sauces and it adds a nutritional boost. Try this brilliant, flavor-packed sun-dried tomato pesto pasta dish!

1 | Cook pasta according to package directions. Rinse, drain and set aside. |
2 | Strain the sun-dried tomatoes, separating the tomatoes from the oil (reserve both). |
3 | Put the pine nuts, garlic, basil and salt into a food processor and blend until combined. |
4 | Add the reserved oil and continue blending until the mixture forms a paste. |
5 | Add the tofu and blend until combined. |
6 | Toss the cooked pasta with the pesto mixture in a large bowl. Gently stir in the reserved sun-dried tomatoes. Serve warm or chilled. |
