The filling is the best part! Skip the crust and save calories and fat.
Ingredients:
1 15 ounce can pumpkin
1 12 ounce can evaporated skim milk
3 egg whites
½ tsp salt
1 tbsp pumpkin pie spice
¼ tsp nutmeg
2 tsp vanilla
1/3 cup sugar
8 tbsp fat free whipped topping
8 gingersnaps
Directions:
1 Combine all ingredients except gingersnaps and mix until smooth.
2 Pour into a 9-inch pie pan sprayed with cooking spray.
3 Bake at 400 for 15 minutes, then 325 for 45 minutes or until a knife inserted in the middle comes out clean. Top each slice with 1 tablespoon fat free whipped topping and 1 cookie.
