Foil packs make great pasta sauce - the result is a fire roasted, delicious pasta dish!
Ingredients:
2 tablespoons sliced fennel bulb
1 tablespoon olive oil
2 Roma tomatoes, diced
1/4 cup sliced black olives
2 garlic cloves, minced
1/4 cup low-sodium vegetable broth
Black pepper to taste
8 ounces whole wheat pasta
1/4 cup fresh chopped basil
Directions:
1 Place fennel, olive oil, tomatoes, olives, garlic and broth into a foil pack.
2 Fold to seal; grill for about 12 minutes.
3 Cook pasta according to pasta directions.
4 Serve sauce over hot pasta and sprinkle with pepper and basil.
5 ENJOY!
