Salmon is a nice and healthy alternative to beef in shepherd's pie. Use fresh fish if you prefer and feel free to experiment with the type of veggies.

1 | Drain the salmon, keeping 2 tablespoons of liquid. |
2 | Mix the salmon with the vegetables, spices and the salmon liquid. |
3 | Place the salmon mixture in a 1-quart baking dish. |
4 | Spread the mashed potatoes over the top of the salmon mixture. |
5 | Bake at 350 until heated through. |
6 | ENJOY! |
