1 | Preheat oven to 350. Place salmon fillets in a large baking dish with about ½ inch water in the bottom. Cover with foil and bake until fish is opaque and flakes easily with a fork, about 20 minutes. |
2 | Meanwhile, combine the tomato, mango, yellow bell pepper, red onion, jalapeno and cilantro in a small bowl. Refrigerate until ready to serve. |
3 | Serve the salmon fillets with salsa and lemon wedges. Goes well with brown rice and steamed broccoli! |
