Lentils make a great base for a casserole - this savory combination of lentils, tomatoes and cheese is splendid.

1 | Combine lentils, water, seasonings, onion, and tomatoes. |
2 | Place in 2 quart casserole dish. Cover tightly with lid or foil. |
3 | Bake at 350 degrees for 45 minutes. |
4 | Remove from oven and add carrots. Stir. Cover and bake 30 minutes longer. |
5 | Remove cover and sprinkle cheese on top. |
6 | Bake, uncovered 5 minutes, until cheese melts. |
7 | ENJOY! |
