1 | Heat tortillas in broiler or in toaster oven until crisp. |
2 | Drizzle lime juice over shrimp and add red pepper to taste. Heat shrimp in a small non-stick frying pan until cooked through, about 3-5 minutes. |
3 | Spread tortillas with beans and sprinkle with cheese. |
4 | Top with lettuce and shrimp. Garnish with salsa, green onion and a small amount of avocado and non-fat or light sour cream if desired. |
