This is a dish your whole family will love! Tofu takes on the flavor of the sweet and sour sauce and the peppers, onion and water chestnuts add crunch.
Ingredients:
1 tbsp canola oil
1 14-ounce package firm tofu, drained and cubed
1 green bell pepper, cut into chunks
1 red bell pepper, cut into chunks
1 small red onion, cut into chunks
1 8-ounce can pineapple chunks (packed in own juice), drained, reserving 1/2 cup juice
1 8-ounce can sliced water chestnuts, drained


Sauce:
Reserved pineapple juice
1/4 cup rice vinegar
4 tbsp lite soy sauce
3 tbsp sugar
2 tbsp cornstarch
Directions:
1 In a large nonstick wok or skillet, heat oil over medium-high heat. Add tofu and cook until golden brown on all sides.
2 Set tofu aside. Add peppers, onions and water chestnuts. Stir-fry until crisp-tender.
3 Meanwhile prepare sauce: combine all ingredients and mix well.
4 Heat in a small saucepan until slightly thick. Set aside.
5 Return tofu to wok or skillet with peppers and add pineapple.
6 Add sauce and heat until heated through. Serve with brown rice.
