This very colorful salad doesn't leave out too many veggies! Top with chicken or tofu for a main meal or serve as a crunchy side salad.
Ingredients:
4 cups, raw spinach
4 cups, romaine lettuce
2 cups, red, yellow, orange bell pepper, chopped
2 cups, grape or cherry tomatoes
1 cup, chopped broccoli
1 cup, chopped cauliflower
1 cup, yellow squash, sliced
1 cup, zucchini, sliced
2 cups, cucumber, sliced
2 cups, baby carrots, chopped
Directions:
1 Wash all of the vegetables and mix them together in a large mixing bowl. Top this colorful meal with the nonfat or low-fat dressing of your choice
