Sweet berries tucked into a favorite breakfast treat make a great weekend breakfast idea. Freeze leftovers for weekday breakfasts!

1 | Stir together dry ingredients in a medium bowl. In a separate bowl, combine egg, buttermilk, oil and vanilla. |
2 | Add wet ingredients to dry; stir until just moist. Gently fold in berries. |
3 | After spraying with nonstick cooking spray, heat a nonstick skillet or nonstick griddle over medium-high heat (to 375 degrees). |
4 | Pour 1/4 cup batter and cook for about 1 1/2 minutes until pancake begins to bubble. |
5 | Flip pancakes and cook 1 minute more, until lightly browned. |
6 | ENJOY! |
