Ingredients:
1 cup whole wheat couscous
2 peppers, diced (any color)
1 onion, diced
½ cucumber, diced
¾ cup light balsamic dressing
Salt and pepper to taste
2 tbsp lemon juice
Directions:
1 Cook couscous according to box directions. Cool once cooked through.
2 Once couscous cooled, mix in peppers, onion, cucumbers, salt and pepper, lemon juice and balsamic dressing
3 ENJOY!
