Go ahead and have some fruit for dessert! Use light or sugar-free syrup to further reduce calories.
Ingredients:
Apples:
4 tart apples
2 Tbsp cornstarch
1/4 cup maple syrup
2 tsp lemon juice
1 tsp ground cinnamon

Oat topping:
1 cup quick-cooking rolled oats
2 Tbsp maple syrup
2 tsp vegetable oil
1 tsp vanilla
Directions:
1 Peel and core the apples, then cut into small chunks. Place in a 9" glass pie plate and toss with cinnamon. Stir well.
2 Cover with vented plastic wrap and microwave on high for 6 minutes, or until the apples are tender. Let stand for 5 minutes.
3 Place the oats in another 9" glass pie plate. Drizzle with maple syrup, oil and vanilla. Mix well.
4 Microwave on high for 1 minute. Stir well. Repeat 3 or 4 times, or until the oats are crisp and very lightly browned but not burned. Sprinkle over the apples.
5 ENJOY!
