Ingredients:
1 head cabbage
1 lb 90% lean ground pork
2 cups cooked brown rice
2-3 cloves garlic
2-3 tbsp grated apple
1 egg
1 cup low sodium tomato juice
1 tbsp Splenda
1 tbsp vinegar
Directions:
1 Boil the cabbage whole, long enough to soften the leaves. Drain and allow to cool.
2 Cook the pork with the apple and garlic until done. Set aside.
3 Mix the tomato juice, vinegar and Splenda; set aside.
4 Add the egg and rice to the pork mixture and combine.
5 Cut out the cabbage stem and separate 10 leaves. Use the remaining cabbage leaves to line a 9 x 13 inch baking pan.
6 Stuff and roll each cabbage leaf with the pork mixture.
7 Cover the cabbage rolls with the tomato juice and add enough water to cover. Bake at 350 for about 30 minutes or until tender.
8 Yield: 5 servings. 1 serving = 2 cabbage rolls.
