Seitan is a high protein, low-fat meat substitute made from wheat. It's versatile and firm texture works well in this savory fajita recipe.

1 | Saute seitan in 1/2 teapsoon olive until browned, about 6 minutes. |
2 | In a seperate pan, saute onions in remaining olive oil for 5-6 minutes. |
3 | Add garlic, red pepper and oregano; saute for a few minutes. |
4 | Stir in seitan and broth and simmer until red pepper is tender, about 3 minutes. Add green onion and pepper to taste. |
5 | Combine sauce ingredients in a blender and process until smooth. |
6 | Place fajita mixture into a warmed tortilla and top with sauce. |
7 | **Tofu or tempeh may be substituted for seitan.** |
