1 | Season the salmon fillets with black pepper and dredge in flour, coating both sides. |
2 | Melt butter in large nonstick pan over medium-high heat. Cook salmon until done – about 4 minutes per side or until salmon flakes easily when tested with a fork. Remove salmon and place on a plate or platter. |
3 | Add broth, white wine and lemon juice to pan and bring to a boil for 1 minute. Stir in capers. |
4 | Pour the sauce over the salmon fillets. |
5 | Serving Suggestion: serve with ½ cup cooked whole wheat pasta and grilled or steamed asparagus. |
