Spruce up brown rice with with colorful mixed vegetables and kidney beans - a delightful display and side dish.
Ingredients:
1 cup vegetables of choice, frozen or fresh - cut into bite size pieces
1/2 cup low-sodium vegetable broth
1 cup cooked brown rice
1/2 can kidney beans (about 7 oz)
2 garlic cloves, minced
Dill weed (fresh-snipped or dry) to taste
Pepper to taste
Directions:
1 Saute the vegetables in the broth using a small pan on medium high heat until tender-crisp.
2 Add the rice, canned beans and seasonings and cook until heated through.
3 ENJOY!
