Full of protein and flavor, these stuffed peppers are good as a main dish or side dish.
Ingredients:
1 large red bell pepper
1/4 cup frozen corn kernels
1/4 cup garbanzo beans, canned and rinsed
4 small fresh mozzarella balls, chopped
2 tablespoons chopped fresh basil
2 green onions, sliced
1 teaspoon olive oil
Directions:
1 Heat all ingredients except red bell pepper over medium heat until heated through, about 5 minutes. Core and seed bell pepper and place ingredients inside.
2 Place stuffed pepper in foil adding 1-2 tbsp of water to the bottom. Seal foil and bake at 350 degrees for 20 minutes or until bell pepper pierces easily with a knife.
