Full of protein and flavor, these stuffed peppers are good as a main dish or side dish.

1 | Heat all ingredients except red bell pepper over medium heat until heated through, about 5 minutes. Core and seed bell pepper and place ingredients inside. |
2 | Place stuffed pepper in foil adding 1-2 tbsp of water to the bottom. Seal foil and bake at 350 degrees for 20 minutes or until bell pepper pierces easily with a knife. |
