Heart healthy and high fiber, barley and lentils make this soup a hearty meal itself.

1 | Heat a large soup pot over medium high heat. Add meatless crumbles and cook until browned, (for ground beef, cook about 5 minutes and drain off extra grease). |
2 | Add onion and sauté until tender, about 2 minutes. |
3 | Add the rest of the ingredients, bring to a boil then reduce to a simmer. Cook on low until barley is tender, about 45 minutes. |
4 | Serve immediately or refrigerate or freeze for later use. |
