This isn't your ordinary side of lima beans! It's simmered in tomatoes with chiles, red bell peppers and spices - making it scrumptious!

1 | Coat large nonstick skillet with cooking spray, heat until hot. Saute celery, onion, garlic, and pepper until tender crisp. |
2 | Add remaining ingredients stirring well and bring to boil. Cover, reduce heat to simmer until lima beans are tender. Discard bay leaf before serving. |
