1 | Heat oil in a large skillet over medium heat. Add the onion, zucchini and carrot and sauté for 8 minutes. Add the garlic and sauté for about 1 minute. |
2 | Add the tomatoes, bay leaf, black pepper and rosemary. Cook, uncovered for 15-20 minutes. Remove the bay leaf and rosemary sprig. Add the basil and add more seasonings if desired. |
3 | Serve over cooked whole wheat pasta or use as a sauce for chicken. |
