This pasta salad will remind you of colorful confetti - so join the party and enjoy this healthy recipe!
Ingredients:
2 cups uncooked whole grain pasta (such as penne)
3 small yellow squash, chopped
2 small zucchini, chopped
1 small red bell pepper, sliced
1/4 cup sliced red onion
1 cup grape tomatoes
1/2 cup sliced black or greek olives
1/2 cup fat free Italian dressing
Black pepper to taste
Directions:
1 Cook pasta according to package directions. Drain and set aside.
2 Mix pasta with remaining ingredients and allow to chill for at least 2 hours to blend the flavors.
3 Yield: about 10 cups. Serving Size: 1 cup.
