Chilled rice salads compliment hot summer days and are refreshing change of pace. Fresh tomatoes, basil and cucumber will tickle your taste buds!
Ingredients:
1 tablespoon olive oil
2 tablespoons vinegar (cider, balsamic or red wine)
2 tablespoons chopped fresh basil
Black pepper to taste
3 cups cooked brown rice, cooled
4 roma tomatoes, chopped
1 medium cucumber, peeled, seeded and chopped
1 yellow bell pepper, chopped
Directions:
1 Whisk together oil, vinegar, pepper and basil in a large bowl.
2 Add rice, tomatoes, cucumber and yellow pepper; toss gently.
3 ENJOY!
