Shrimp and scallops are naturally lean and cook very quickly. Add some vegetables and you have an ideal meal!

1 | Spray a large skillet with cooking spray. Add olive oil and heat over medium-high heat. |
2 | Add cauliflower and stir-fry for about 2 minutes. Add bell peppers and stir-fry another 2 minutes. |
3 | Add shrimp and cook for 2 minutes. Add scallops and continue cooking until shrimp turn pink and scallops turn white. |
4 | Add broth and lemon juice and heat until warm. |
5 | Serve over brown rice or whole wheat pasta. |
6 | ENJOY! |
