1 | In soup pot over medium heat, melt butter. Add onions and apples and cook, stirring occasionally, until softened, about 10 minutes. |
2 | Stir in squash puree, 2 1/2 cups broth, garlic and bay leaf. Bring to a simmer, reduce heat to medium-low and cook, stirring occasionally, about 30 minutes. Discard bay leaf. |
3 | Using a hand blender, puree soup in pot until smooth (or work in batches using a blender). Pour through a fine mesh sieve and set over a clean soup pot. |
4 | Stir in fat free half and half and remaining broth and warm soup if needed. Season with salt and black pepper. Garnish soup with a dash of nutmeg. |
