Berry pudding is pleasant and refreshing change of pace from chocolate or vanilla. Serve with light whipped cream for a decadent treat.
Ingredients:
3 cups raspberries
1 cup water
3 tablespoons cornstarch
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 cup Splenda
1/2 teaspoon vanilla extract
12 tablespoons fat-free whipped cream
Directions:
1 Combine 1 cup berries, water, cornstarch, salt and cinnamon in a medium saucepan.
2 Cook over medium heat, stirring constantly, until mixture thickens.
3 Add remaining 2 cups berries, Splenda and vanilla, stir well. Let cool before serving.
4 ENJOY!
