High in fiber, low in fat and full of vitamins, this stuffed sweet potato is as easy as it is delicious!
Ingredients:
3 medium sweet potatoes
1 cup canned black beans, drained
1/3 cup catsup
1 tablespoon blackstrap or dark molasses
1 tablespoon minced garlic
1 tablespoon chili powder
dash cayenne pepper (optional)
Directions:
1 Wrap each sweet potato in a moist paper towel. Microwave potatoes individually on high until soft in the middle. Or bake potatoes (no paper towel) in conventional oven at 400 degrees for 45 minutes.
2 Combine remaining ingredients in a saucepan. Cook until mixture just starts to boil.
3 Halve each cooked sweet potato lengthwise. Top each potato with 1/3 of black bean mixture and enjoy. Serves 3 (each serving: 1 potato with 1/3 cup mixture).
4 ENJOY!
