High in fiber, low in fat and full of vitamins, this stuffed sweet potato is as easy as it is delicious!

1 | Wrap each sweet potato in a moist paper towel. Microwave potatoes individually on high until soft in the middle. Or bake potatoes (no paper towel) in conventional oven at 400 degrees for 45 minutes. |
2 | Combine remaining ingredients in a saucepan. Cook until mixture just starts to boil. |
3 | Halve each cooked sweet potato lengthwise. Top each potato with 1/3 of black bean mixture and enjoy. Serves 3 (each serving: 1 potato with 1/3 cup mixture). |
