Tomatillo Salsa or Salsa Verde brings a refreshing taste to Mexican dishes, shrimp, chicken or pork and of course, is great with baked chips!

1 | Place tomatillos in a saucepan, cover with water and bring to a boil. Cook about 15 minutes or until tender. |
2 | Place tomatillos, peppers, lime juice and garlic in a food processor or blender and process until smooth. Add onion and cilantro and pulse a few times. |
3 | Pour into a bowl and stir in tomatoes. Goes well with tacos, black beans and low-fat quesadillas! |
4 | Yield: 2-3 cups. Serving Size: 1/2 cup. |
