Tired of pasta with red sauce? Try this refreshing alternative! Tortellini combined with vinaigrette, mozzarella and veggies make for a great main dish.

1 | Cook tortellini according to package directions. During the last few minutes of cooking, add frozen artichoke hearts. |
2 | Drain and rinse in cool water. Place in a large bowl. |
3 | Add remaining ingredients, tossing gently to coat. Allow to chill in refrigerator for flavors to merry. |
4 | Serve over a bed of spinach or with grilled chicken, shrimp or tofu. |
