1 | Wash potato under cold running water to remove dirt. Prick with a fork and cook in the microwave until done, about 5 minutes. Cut in half and fluff with fork. |
2 | Meanwhile, heat the veggies in a microwave (about 2-3 minutes) or in a steamer on top of the stove. |
3 | Top potato with veggies, cheese, salsa and sour cream. Season to taste with Mrs. Dash and pepper if desired. Eat right away or wrap in foil for later. |
