Basic crepes get a simple makeover by adding whole wheat flour! Stuff them any healthy way you want and enjoy!

1 | Combine flour and 1/2 of the egg substitute; beat well on low speed. |
2 | Add remaining egg substitute and beat 3-5 minutes. Add lemon zest, cinnamon and margarine. |
3 | Gradually stir in enough milk until batter has the consistency of thin cream. |
4 | Allow batter to sit 2 hours. Spray a small skillet with cooking spray and heat over medium heat. |
5 | Pour 1/4 cup batter in skillet, tilting skillet so that batter coats surface evenly. |
6 | Pour any excess batter into the bowl. Cook crepe until lightly browned on bottom, about 1 minute. Turn and brown other side. |
7 | ENJOY! |
