1 | Cook pasta according to package directions and set aside. |
2 | In a large skillet over medium-high heat, saute shallots and mushrooms in olive oil until tender. |
3 | Add white wine and cook until evaporated, about 2-3 minutes. |
4 | Add tomato sauce and simmer -about 4-5 minutes. Add cream and simmer another 2 minutes. |
5 | Combine sauce with pasta and heat until warm. Sprinkle with parmesan cheese and fresh Italian parsley for garnish. |
