What's better during the holiday season than healthy cookies with a ruby red center!

1 | Preheat oven to 375. In large bowl, mix flour, baking powder, baking soda and salt. |
2 | In a separate bowl, cream, applesauce, sugars, egg and vanilla together. Add flour mixture to applesauce mixture. Mix well. |
3 | Drop rounded teaspoons onto a cookie sheet that has been sprayed with non-stick spray, 2" apart. |
4 | Make an indent in each cookie with your thumb, and drop ½ teaspoon of jam into each cookie. |
5 | Bake for 10 to 12 minutes. Remove from oven and cool on cookie sheet. |
6 | ENJOY! |
