A delicious peanut stir-fry is an incredibly and easy way to add a burst of color to your day and your health!

1 | Heat oil in a large non-stick skillet or wok over medium-high heat. Add vegetables and stir-fry 3-4 minutes. Add chicken and stir-fry until chicken is cooked through, about 5 minutes. |
2 | Combine soy sauce, rice vinegar, sugar and red pepper flakes. Add peanuts and soy sauce mixture to stir-fry. Stir-fry for 2 minutes or until vegetables are crisp-tender and mixture is heated through. |
3 | Serve over steamed brown rice or soba noodles. |
