Viva los Nachos this Cinco de Mayo - the healthy way! Most nachos are loaded with fat - but not these yummy nachos. Perfect for a party or fun dinner.

1 | Preheat oven to 350 F. |
2 | Heat a non-stick pan and saute onions on medium high until clear. |
3 | Add garlic and saute for one minute. Add beans, pepper, and jalapenos to pan, cook and stir for about 10 minutes. |
4 | Transfer the contents to a bowl. In a seperate bowl, mash bean mixture until smooth, adding water if necessary to make puree smooth. |
5 | Place chips on a baking sheet. Spread beans, onions and pepper mixture evenly on top of tortilla chips. Sprinkle cheese and diced tomatoes. Bake until cheese melts, about 10 minutes. |
6 | Add additional toppings if desired. |
7 | ENJOY! |
