Serve this refreshing cold soup before dinner to add veggies and tons of flavor!

1 | Combine tomatoes, cucumbers, peppers, basil and garlic in food processor (leave 1 green onion for garnish). |
2 | Process using chopping blade until smooth. Place in large bowl. |
3 | Add olive oil, vinegar and tomato juice. Season to taste. |
4 | Refrigerate before serving. Garnish with chopped green onion. Makes 8 1 cup servings. |
