Silken tofu makes a fantastic substitute for higher fat ingredients such as cream cheese. You'll be delighted by the creamy texture and sweet topping.
Ingredients:
Filling:
3/4 pounds silken firm tofu (such as Miru Nu)
1/2 cup sugar
6 ounces light cream cheese or soy cream cheese, softened
2 tsp vanilla extract
2 cups fresh berries of choice for topping
Melted chocolate, optional

Crust:
use prepared 9-inch reduced fat graham cracker pie crust
Directions:
1 Preheat oven to 325.
2 In a food processor or blender, puree the tofu until smooth. Add the sugar, cream cheese and vanilla, processing until smooth.
3 Pour the mixture into the prepared pie crust and bake for 50 minutes, until slightly browned. Turn the oven off, leaving the pie in the oven for 1 hour. Remove and allow to cool.
4 Refrigerate the cheesecake overnight. Serve slightly chilled and top with fresh berries of your choice. Drizzle with melted chocolate if desired.
