Silken tofu makes a fantastic substitute for higher fat ingredients such as cream cheese. You'll be delighted by the creamy texture and sweet topping.

1 | Preheat oven to 325. |
2 | In a food processor or blender, puree the tofu until smooth. Add the sugar, cream cheese and vanilla, processing until smooth. |
3 | Pour the mixture into the prepared pie crust and bake for 50 minutes, until slightly browned. Turn the oven off, leaving the pie in the oven for 1 hour. Remove and allow to cool. |
4 | Refrigerate the cheesecake overnight. Serve slightly chilled and top with fresh berries of your choice. Drizzle with melted chocolate if desired. |
