This tangy, savory tempeh salad makes a great sandwich filling and tastes great served over mixed greens.

1 | Cut tempeh into cubes and cook over medium heat until browned. Crumble tempeh and sprinkle with soy sauce. |
2 | Combine remaining ingredients in a bowl. Add tempeh and mix well. |
3 | Serve at once or chill for later. Yield: 4 servings. Serving Size: about 1/2 cup. |
