This tangy, savory tempeh salad makes a great sandwich filling and tastes great served over mixed greens.
Ingredients:
1 8-ounce package tempeh
1/2 cup diced celery
1/2 cup chopped onion
1 teaspoon dill seed
1 tablespoon lite soy sauce
1/4 cup non-fat plain yogurt
2 tablespoons low-fat plain yogurt
2 teaspoons dijon mustard
Black pepper to taste
Directions:
1 Cut tempeh into cubes and cook over medium heat until browned. Crumble tempeh and sprinkle with soy sauce.
2 Combine remaining ingredients in a bowl. Add tempeh and mix well.
3 Serve at once or chill for later. Yield: 4 servings. Serving Size: about 1/2 cup.
4 Serving Suggestions: serve over mixed greens with fresh veggies and dressing or stuff into a pita pocket with tomato and lettuce.
