Sweet artichokes and herbs make an amazing addition to this very simple and low-fat meal.
Ingredients:
8 oz whole grain pasta
2 cups low-fat, low sodium pasta sauce
1 tablespoons fresh chopped basil
1 teaspoon bottled garlic or garlic powder (or more to taste)
1 cup frozen artichoke hearts
1/2 cup sliced green onion
1 cup diced fresh tomatoes
Black pepper to taste
Directions:
1 Cook pasta according to package directions. During the last few minutes of cooking, add artichoke hearts. Drain and rinse in colander.
2 Return pasta to pot. Add pasta sauce, basil, garlic and green onion. Cook over medium heat until heated through. Stir in tomatoes and enjoy.
3 ENJOY!
