These potato pancakes or baked rather than fried and have added vegetables to boost nutritional content.

1 | Preheat oven to 350. Remove as much liquid from the potatoes and vegetables as possible by placing the grated potatoes in a paper towel and squeeze the liquid out of the mixture. Do the same for the grated onions and vegetables. |
2 | Brush oil onto a baking sheet and set aside. Combine all the ingredients and mix together well by hand. Form individual pancakes by hand and place onto the prepared baking sheet. Bake until crispy on both sides; about 10 minutes on each side. |
3 | Serve immediately for the best taste. You can keep the latkes hot in a warm oven. Serve with light sour cream, low-fat plain yogurt or applesauce. |
