Sunday morning is a great time to enjoy warm, freshly baked cornbread! Try serving this with scrambled egg whites or egg substitute and fresh fruit.
Ingredients:
1 can no salt added cream style corn
1/2 cup egg substitute
1 cup corn meal
3/4 cup non-fat milk
3 tablespoons canola oil
1/2 tsp baking soda
1 (4 oz) can diced green chiles
1/2 red bell pepper, diced
1/2 cup light shredded cheese
Directions:
1 Preheat oven to 400 F.
2 Mix all ingredients and pour into an 8" X 8" baking pan sprayed with cooking spray.
3 Bake 35-40 minutes or until a toothpick inserted in the center comes out clean.
4 1 serving = 1/9 of the baked cornbread.
5 ENJOY!
